Sterlet

 

Sterlet sturgeon (Acipenser ruthenus) are listed as a “vulnerable” species on the IUCN Red List and are protected by CITES.

This small fresh water sturgeon was historically one of the most common in Russia. It was used for its meat and caviar. Sturgeon Aquafarms has the only live examples in the USA.

The species endured a 40% decline in global stocks over the last 60 years.

Wild range: Austria, Azerbaijan, Belarus, Bosnia, China, Croatia, Germany, Hungary, Kazakhstan, Moldova, Romania, Russia, Serbia, Slovenia and Ukraine

Habitat: Freshwater rivers

Adult length: 2-3 ft

Adult weight: 3-5 lbs
